Rosemary leaves are used as a flavoring in foods such as roast vegetables, stuffing, and roast lamb, pork, chicken and turkey. This potent herb has a bitter, astringent taste and a characteristic aroma which complements many cooked foods. When roasted with meats or vegetables, the leaves impart a mustard-like aroma with an additional fragrance of charred wood compatible with barbecued foods. Herbal tea can be made from the leaves. Rosemary has anti-inflammatory, antibacterial and anti-microbial properties.
For fresh use, store in an airtight container in fridge for up to a week. Dried, store in an airtight container in a cool, dry place for up to six months.
