Dried Calypso Beans are small, plump beans known for their distinctive starkly contrasted coloring of white and black.  These beans, also called ying yang beans, are half black and half white, often with one or two black dots upon the white, much like the Chinese symbol from which they take their nickname. When cooked, these beans hold their form and retain most of their coloring, albeit not as brightly contrasted. Their flavor is mild and earthy with a smooth and creamy texture.  Good for soups, stews, and tacos.
