Also known as celery root, this root vegetable has mild celery flavor and white flesh underneath its gnarled, knotty exterior. It’s commonly used in soups and a variety of other Fall and Winter dishes. The tops are edible, though not as desirable as traditional celery, as celeriac is grown for the root.
